I hand picked each fig that went in that bowl, the ripe ones go in the bowl the questionable ones get turned into jam(i have a bunch in the freezer now getting ready for some jam or ice cream). A fig should be soft, juicy and sweet and barely held together by its skin. The wieght from the figs on top and being picked at through the night damaged the ones on the bottom. You'll see today that I have them arranged in a single layer so that wont happen again. These figs arc in peak season and they arc very delicate. My mistake won't happen again.
