Over time it will age, scratch, patina, wear, etc. but some are ok with that. Going with a man made quartz composite that is resistant to heat, scratches, staining, etc. would alleviate the concern on the island since this is a main focal area in the kitchen that most people like to congregate around :) We deal with Penthal and Caesarstone which can be mitered and edges laminated to give it a 2" appearance. If you go with a nice grey I think that would accent the Carrara very nicely. I will give you a list of places to view carrara slabs because its hard for me to price anything until we find a lot you like because the pricing is all over the place these days and slab sizes vary. To narrow your search you can look at their websites and if you find something that interests you then you can take the ride to see them in person. Most would like you to make an appointment but it is not necessary. Unfortunately, we do not deal with wood countertops so I can't help you with that :( Please let me know if you have any questions.
