Schedule busboy and runners meeting 3rd Tuesday of month at 3:30pm. Have all sign off. Note: Be sure when having your meetings they are in an area clear of guests so as not to be rude. Give quarterly food tests to all workers if none given in last 2 weeks. Advise hosts to call regular lunch (and possibly dinner) guests to see if they're coming in that day. We want to make sure we have a special table ready for them or their regular or desired table/section. Note: Use the MEMO FIELD in Open Table to indicate these guests preferences re: sitting, eating, drinking, etc. Training / Mentoring / Testing staff — Everyone up to speed. Manager and Chef Notes: Week after Jan 1 slow - cut back and book all parties. VIP: Review coat check side duties w/ coat check workers. Chefs: Confirm you have a complete set of oyster tags for display. Confirm all oysters for month are in index. MGRS: 1 month out have 2 phone hosts everyday for Valentine reservations. Schedules: Kitchen crew in by 9 AM; waiters in at 9:30 AM - advise all not to be late that day. Have them all sign schedule. Try not to use same waiters as New Years Eve. Full brunch service crew with 2 hosts & coat check. Night manager must be in at 1 PM to help with brunch (it's an early night). Bring night staff in early as you do with summer brunch.
